Tator Salad

Memorial Day weekend, what some consider the “official” beginning to summer. Kids are out of school for the year and starting summer vacation, family vacations are starting, and everyone’s having a great time! One of my favorite things during these holiday weekends is the FOOD! My new favorite summer recipe to make is my homemade tator salad. I’ll share my recipe below. Tator Salad
5 medium red potatoes, peeled & cut into chunks
2 cups miracle whip
2 tbsp. yellow mustard
1/3 cup pickle relish
4 hard-boiled eggs, peeled & cut into chunks
3 tbsp. butter
*Optional: paprika, onions, bacon bits
->Add to taste
Boil 3 cups water. Add 3 tbsp. butter to boiling water. Add potatoes. Continue boiling until potatoes are semi-soft. Drain potatoes and rinse with cold water. Drain and set aside.
In a medium size bowl combine miracle whip, mustard, and relish. Mix together.
Cut the eggs into chunks and add to the bowl. Mix together.
Add the potatoes and mix together.
This is optional….I add bacon bits and paprika to mine. Half a bag of bacon bits and a sprinkle of paprika. You can also add onions. Add to your liking.
